When we first opened the restaurant back in 2013, we served a Sunday brunch buffet. We featured homemade desserts, muffins, Belgium style waffles and lunch entrees. One of our signature desserts were these fudge brownies.
I worked the buffet line every Sunday and I can’t tell you how many times I was asked about this recipe. Its so easy and it only takes one bowl to make! They are fudgey and gooey, everything you could want from a brownie.
I always like to slightly under bake them to maintain their fudginess. It’s a great recipe because most of the time I always have all the ingredients and there are no trips to the store necessary when I am in the mood for something sweet!

INGREDIENTS 1 cup all purpose flour 1 cup brown sugar 1/4 cup white sugar 1 tsp espresso powder 1 tsp baking powder 1 1/2 cups semi sweet chocolate chips 8 tbsp salted butter 3 eggs STEPS 1.) In a large microwave proof bowl, add chocolate chips and butter. Melt for 30 seconds at a time, stirring in between until smooth. 2.) Add eggs to bowl one at a time and mix until combined. 3.) Add brown and white sugar 4.) Sift flour, espresso powder and baking powder into the bowl and mix until just combined. 5.) Grease and flour a 9″x9″ square cake pan and pour in batter 6.) Bake in a preheated oven at 350 F for about 20-30 minutes, or until center is just set. |
