If you’re in the mood for something sweet and unique this is a great recipe. My sister, Hannah makes delicious cookies and some how manages to get them to look exactly the same. I asked her to share my favorite from her repertoire, which are these chewy chocolate fudge cookies.

She told me that she likes to slightly under bake them so they retain that almost brownie like consistency. They are very rich and pair perfectly with a glass of cold milk.

Chocolate Fudge Cookies

INGREDIENTS
2 1/2 Cups all purpose flour
1 1/4 tsp baking powder
1 cup extra dark cocoa powder (dutch processed preferred)
2 1/2 sticks salted butter
1 1/2 cups of sugar
1/2 cup brown sugar
3 eggs
2 tsp vanilla extract

STEPS
1- Combine cocoa powder, flour and baking powder in a medium bowl
2- In a large mixing bowl, cream together butter, sugar and vanilla extract until fluffy (about 3-5 minutes)
3- Add eggs one at a time until mixed thoroughly
4- In three parts, add flour, mix until fully incorporated.
5- Wrap cookie dough with plastic wrap and place in the refrigerator of 1 hour
6- Scoop dough and form a small ball, roll in granulated sugar and place on a baking sheet lined with parchment paper. Repeat until all the dough is used up, usually makes about 24 cookies
7- Bake in a preheated 350 F oven for 10-12 minutes

*Note: Cookie dough and be frozen for up to 3 months
